I can't remember what I ate on Jan. 7 although I'm sure that it involved cabbage - I was on a serious cabbage kick all this week - I ate cabbage or kale almost every day. lol Good thing I'm single!
ETA: wait, I remembered!
I made a savoury pancake with leftovers - so, the batter was one cup of chick pea flour (besan, not the dark one), with probably an equal amount of water; spices were garlic powder, sweet paprika, and S&P. I added various leftover veggies from the last couple of meals I had to it, and fried it until both sides were golden brown. I had it with President's Choice black bean and corn salsa.
I was reviewing some of my cookbooks though, here's a pic of Riley with one of them to prove it!
