I didn't feel like eating all day (Saturday is the day I lie in bed all day); so I ate nothing until dinner time, at which time I attempted a "chow mein" inspired by my finding a packet of "chow mein" sauce.  So I sliced off a chunk of tofu and cut it into cubes, lightly tossed them in seasoned rice flour (garlic powder, s&p) and fried them until crispy on all sides. I also sauteed some squash, broccoli, cabbage, carrots, onion, and fresh chili peppers. While I was doing all of that, I prepared chow mein noodles per the package directions, and then combined it all with the sauce. No pictures please! lol  I didn't think to take a picture, because I didn't decide to keep track of my meals until tonight - but here's a pic of the snow?  4.7 km I guess I'm gonna have to do a real walk tomorrow to catch up!

So, for a brunchy type meal, I had leftover spicy chickpeas I had made, which I put on a fenugreek wrap, added sauteed onions, some of that salsa from the day before, and vegan feta, and then I put another wrap on top. Then I lightly fried it on both sides, and had a sort of crunch wrap. I also quickly sauteed some kale and garlic for a veggie side.  For dinner, I went out for Japanese with a friend, and totally indulged. I had veggie pizza (not like an Italian pizza - a sushi version); steamed veggie gyoza, and a veggie planet roll.  (I don't know exactly what's in it, but it's fried deliciousness).  I also "finished" this piece - which I've been working on, on and off for the last 4 years - but I don't think it's quite done? I think I need to feather up that bird.  6.8 km

Cabbage reappears! I had a cabbage steak, broccoli, kale, sauted onions, and a tofu steak  - I think I also had some brown rice. Once again, I didn't track breakfast and lunch, but I'll start doing that next week.   4.1 km

Oooohhh January 8 was a doozy!  I can't remember what I ate for breakfast or lunch (it was probably brunch); but I had a tofu burger from Farm Boy, and made some awesome sides and yummy accompaniments for it.  On the burger itself, I had toum (from Farmboy), jarred roasted red peppers, caramelized onions, and sauteed mushrooms.  For sides, I had coleslaw with a home-made dressing (rice vinegar, gojuchung, and way too much sugar); sweet pickles, purple sweet potato fries, and sauteed squash.  4.1 km

 5.32 km I can't remember what I ate on Jan. 7 although I'm sure that it involved cabbage - I was on a serious cabbage kick all this week - I ate cabbage or kale almost every day. lol Good thing I'm single! ETA: wait, I remembered!  I made a savoury pancake with leftovers - so, the batter was one cup of chick pea flour (besan, not the dark one), with probably an equal amount of water; spices were garlic powder, sweet paprika, and S&P. I added various leftover veggies from the last couple of meals I had to it, and fried it until both sides were golden brown. I had it with President's Choice black bean and corn salsa.  I was reviewing some of my cookbooks though, here's a pic of Riley with one of them to prove it!

So, I decided to actually *use* my dull diaries, to track my meals  (I'm trying to figure out what I do cook regularly, what I should cook regularly, and the new recipes I try.) I'm also going to post pictures from my walks with Riley and my walks on my own, maybe talk about my fitness attempts and ongoing weight loss project. I have been tracking these things through notebooks and journals - but why not have it all in one place? Ain't nobody here but us chickens. ;)  So, today's unappetizing photo (lol) - this was actually really yummy, even if it wasn't pretty.  I had a pita, smeared with hummous, toum, vegan feta, and bottled antipasta (with the oil squeezed out). My sides were leftover broccoli and cabbage from the day before.  It wasn't pretty, but it was yummy! Since I'm posting from the future, I can't actually remember what I had the rest of the day, or what I did or..? lol I walked 5.8 km though. I'm doing my usual 2,025 km in 2025, and have...
